Ingredient and Steps:

  1. Spare Ribs 1.5 kg ( 1st boil x 1.5hrs , 2nd boil x 1.5 hrs ) <~~take out and leave aside after 2nd boiling
  2. Shallots x1
  3. Garlic x1
  4. Galangal x 4 pcs ( 1cm slice thick X FOUR)
  5. Big onion x 1.5 slice
  6. Lemongrass x 4 stack (chop and leave top part)
  7. Kaffir leaf x 10
  8. Salt x 1.5 tbsp
  9. Soya sauce x 1.5 tbsp
  10. Sugar x 1.5 tbsp
  11. Ginger x 6-7 pcs (1 cm thick slice).
Item no. 2 to no.10 <~~ this all to put together with pork ribs when going to do the 2nd time boiling.
  • Coriander x 2 pack (chop 1 cm)
  • Spring onion x 1 pack (chop 1 cm) <~~ put aside for mixing with chilies / green chilies sauce.
  • Once finish boiling the 2nd time, scoops the soup n place in medium size bowl.
  • Add all the chop coriander n spring onion ~> 
  • Add in sauce all together and leave aside.
  • Pork ribs - take out the spare ribs and place at bottom of bowl.
  • Then take out the big spare ribs (if have) to place like pyramid on same bowl.
  • Final step - pour the earlier mixed ingredients on top the pork ribs.
Sauce ingredients: (blend everything together)
  1. 5 x coriander roots
  2. 5-7 × garlic
  3. 5 green chilies
  4. 3-4 pcs palm sugar (small size)
  5. 1/2 cup fish sauce
  6. 1/2 cup lime juice
